Japan’s first sushi auberge opens this fall: Hitotsu Noto, 42-4 Notojima Susomachi, Nanao, Ishikawa, Japan.
The concept of a sushi auberge is rare, even in Japan but Hitotsu Noto aims to change the narrative with its innovative concept that delivers a five-sensory experience for guests seeking a magnificent experience. Revitalized based on its core structure which was a popular local hotel, owner/designer Yuji Nakanaga, an award-winning architect with a wealth of accolades for design, has created something incredibly unique.
Set in the paradise of Notojima, a stunning land rich with natural wonder, the property’s culinary attributes are the result of the vision of Mr. Koji Mitsukawa, head chef of Sushi Mitsukawa who has a flagship outpost in Kanazawa featuring the finest sushi created by the high quality ingredients nurtured by the land. Chefs here have honed their skills at some of Japan’s most famous restaurants and their creations are on display for guests who enjoy their all inclusive concept that blends sushi and local dishes with beautiful varieties of local sake, beer, wine and original cocktails infused with local fruits and vegetables.
The property’s eight rooms all feature views of the sparkling ocean framed by the Tateyama mountain range and have been designed to foster relaxation from tatami mats on the floor to soothing colors against sleek clean lines.
