One famous local dish is the so called ‘Schäufele’ (diminutive for shovel). It is roasted pork shoulder and usually comes with a traditional Franconian dark beer sauce, which is the secret of the meat’s crispy crackling. Together with dumplings, red cabbage and Silvaner white wine it makes for a perfect pairing.
