Mad for Marmalade
The sixth annual Mad for Marmalade, Crazy for Citrus competition is set for 10 a.m. to 4 p.m. February 23, 2013, at the Fort York National Historic Site, 250 Fort York Boulevard, Toronto, Ontario, Canada (map).
It’s hosted by the Culinary Historians of Canada in partnership with Fort York National Historic Site.
Workshops include “Lemon Tart — Sweet Variations”, “A Florendine of Oranges” and “Making Marmalade 101”. There also will be cooking demonstrations by Florida Citrus and sessions on both historical and “Modern Safe Preserving Methods”. Topic for the keynote speaker, Mark Morton, is “The Fruits of My Labor: Why Apricots are Precocious and Plums are Perfect”.
The marmalade competition is in four categories: Pure Seville Orange Marmalade, Citrus Marmalade, Citrus Combo Preserves and Baking with Marmalade.
