World Championship Crawfish Étouffée Cook-Off

Etouffee Cookoff, Eunice, LouisianaThe World Championship Crawfish Étouffée Cook-Off takes place from 10 a.m. to 4 p.m. March 29, 2020, in the Northwest Community Center Pavilion, 501 Samuel Drive, Eunice, Louisiana.

This event, sponsored by the Eunice Chamber of Commerce, features professional and amateur cooks vying for the title of “World Champion.”

Teams will compete to see who can cook the best crawfish étouffée in three categories: Amateur, Professional and Club/Organization. Once the judges have their samples from the booths, the public can buy the crawfish étouffée directly from the participants (and vote for their favorite to win the People’s Choice Award). The winners will be announced around 3:30pm.

Enjoy live Cajun and zydeco music (starting at 10 a.m.), plenty of dancing, and, of course, tons of étouffée.

Not familiar with étouffée? According to Wikipedia: Étouffée is a dish found in both Cajun and Creole cuisine typically served with shellfish over rice. The dish employs a technique known as smothering, a popular method of cooking in the Cajun areas of southwest Louisiana. The technique involves cooking in a covered pan over low heat with a moderate amount of liquid, and can be regarded as a form of stove-top braising. Crawfish, freshwater crustaceans resembling small lobsters, are also known as crawfish, crawdads, freshwater lobsters, mountain lobsters, mudbugs, and yabbies.
