May is National Salad Month.
According to the Center for New Media and Promotion of the United States Census Bureau, each year Americans eat an average of around 13½ pounds of lettuce, 17 pounds of onions, 10 pounds of bell peppers, 8 pounds of carrots, just under 3 pounds of mushrooms and 17 pounds of tomatoes.
To flavor those salads, the bureau notes, 32,000 Americans work for the 756 manufacturers of mayonnaise, seasonings, dressings, and prepared sauce.
